Fluffy Sweet Potato Banana Bread Recipe

Banana bread is a popular use for overripe bananas. It's easy and tasty, and you can customize it. Jessica Morone's recipe matures by adding mashed sweet potato, but she makes other changes. 

– 2 cups all-purpose flour – 1 teaspoon baking soda – ¼ teaspoon salt – ½ teaspoon ground cinnamon – ½ cup unsalted butter, softened – ¾ cup packed light brown sugar – 2 large egg – ⅓ cup sour cream – 1 cup mashed sweet potatoe – 1 cup mashed banana – 2 teaspoons maple extract – ½ + ¼ cup chopped pecans, divided

Heat the oven to 350 F. Grease a 9x5-inch loaf pan with nonstick cooking spray. Mix flour, baking soda, salt, and ground cinnamon in a medium bowl.

Transfer butter, brown sugar, eggs, sour cream, sweet potatoes, bananas, and maple extract to a large bowl.

Mix the dry ingredients into the wet ingredients until just combined. Mix in ½ cup chopped pecans. In the loaf pan, evenly distribute the batter.

Bake the bread for 55–60 minutes in the preheated oven until a toothpick inserted into the center comes out with a few moist crumbs.
