Thanksgiving-In-A-Loaf Bread Recipe

Some recipes use Thanksgiving leftovers, while others preview the holiday. Developer Tess Le Moing says this Thanksgiving-in-a-loaf quick bread is inspired by French gateaux sale, or savory cake.

– 1 medium sweet potato, peeled and diced (about 1 cup) – 1 tablespoon olive oil – 1 ¼ teaspoon kosher salt, divided – 4 tablespoons salted butter – 1 medium onion, diced (about 1 cup) – 2 tablespoons minced fresh thyme – 1 tablespoon minced fresh sage – 1 ½ cups all-purpose flour, sifted – 2 teaspoons baking powder – 3 large eggs plus 1 egg yolk, room temperature – ½ teaspoon ground black pepper – 1 ½ cups (about 3 ½ ounces) grated gruyère cheese – ½ cup chicken broth – ¾ cup turkey sausage links, cut into ½-inch slice – ½ cup dried cranberrie – ¾ cup frozen cut green beans, thawed

Heat the oven to 350 F. Lay parchment paper over a loaf pan's sides. Mix sweet potatoes with olive oil and ¼ teaspoon salt on a baking sheet.

Roast sweet potatoes for 15 minutes until fork tender. Allow to cool in a bowl. Over medium heat, melt butter in a skillet.

Cook onions for 5 minutes until softened. Add thyme and sage and cook until fragrant. Allow to cool in a bowl.

Mix flour and baking powder in a large bowl. In a separate bowl, beat 3 eggs, 1 teaspoon salt, and black pepper.

Mix wet and dry ingredients. Mix in sweet potato, turkey sausage, dried cranberries, and green beans.

Pour into the loaf pan. Brush beaten yolk on top. Bake until the top is golden brown and a toothpick inserted in the center comes out clean, about 1 hour.

Slice loaf and serve room-temperature or warmed for 15 minutes in 250 F oven.
