Whipped Ricotta Cherry Crostini Recipe

Looking for a simple but impressive summer appetizer? Whipped Ricotta Cherry Crostini are quick and easy to make and will impress your guests!

INGREDIENTS

– 1 baguette – ¼ cup extra-virgin olive oil, divided – ¾ tsp black pepper, divided – ¾ tsp salt, divided – 1 ½ cups whole milk ricotta – 1 ½ Tbsp honey, plus more for drizzling – 1 Tbsp heavy cream – 1 tsp freshly squeezed lemon juice – 1 ½ cups halved cherrie – 2 Tbsp chopped pistachio – 1 tsp chopped mint

INSTRUCTIONS

Preheat oven to 400°F.Cut bread diagonally into ¼" slices and place on baking sheets.

Step 1

Add ½ tsp salt and ½ tsp pepper to bread and lightly coat with 3 Tbsp olive oil.Bake 15-20 minutes until toasts are golden.

Step 2

Chill out. Mix ricotta, honey, heavy cream, 1 Tbsp olive oil, lemon, ¼ tsp salt, and ¼ tsp pepper in a blender or food processor.

Step 3

Be creamy and smooth. In a stand mixer or large bowl, use a hand mixer or rubber spatula.Whip ricotta and spread on cooled toasts.

Step 4

 Add halved cherries, chopped pistachios, and mint. Before serving, drizzle honey again.
